Menu Plan Monday!!!

This week is a short week for my family in way of meals because the kids leave Friday evening to go to their "other" parents' so I only have to plan 4 meals-the hubster and I will eat Subway on Friday. Well, 3 really. On Monday my sister and I are taking the kids to downtown Greenville for a picnic and some play. As far as lunches go, I only really plan 4 since my husband and I (he works 5pm-3am) just "piddle" on Fridays. Most of these meals are coming from my freezer so I haven't had to go grocery shopping for the week for anything other than milk, eggs, etc.

LUNCHES
*15 bean soup-made with leftover ham hock from Easter (will put leftovers in freezer for another day)

* grilled salmon (got on sale at Food Lion B1G1), rice and steamed broccoli

* rice lasagna (left over from dinner last week),
~layer cooked rice with spaghetti sauce and cheese

* sandwiches

DINNERS
*bubble pizza
~quarter two cans biscuits (i'm gonna use homemade pizza dough), mix with 2 cans pizza sauce (or homemade pizza sauce) and preferred pizza toppings (we are using ground beef because I have it on hand). bake @350 for 20 minutes then top with mozzarella cheese and bake til melted!

*apple dijon pork roast with rice and sugar snap peas (cook a pork tenderloin {these go on sale at Food Lion alot}, apple juice & dijion mustard in crock pot on low for 6-8 hours).

* stone soup & cornbread (This is made with leftovers of things like meat and veggies that I would normally throw out because it isn't enough to save. I keep them in a bag in the freezer and throw in pot togetherand add chicken broth or other meat/veggies if necessary)
